FERMÆNTRA is a small, independently-owned, Denver brewery that produces artful, bold, world-class craft beer in Denver, Colorado.
Our team is comprised of people who have varied professional backgrounds and education. Science, engineering, business, music, education, the list goes on. However, we all share a common love and passion: beer. Using this set of diverse backgrounds and knowledge, we create beer that is inspired by art, rooted in science, and executed with precision.
Malt: Belgian Pilsner, Vienna, Cara Blond, Cara Ruby
Named for the glimmer of moonlight on a tranquil ocean, this beer is crisp, calm, and effervescent without sacrificing flavor or complexity. This Belgian-styled interpretation of a Pilsner begins with a nose of golden apples, Belgian candy, and a subtle hint of rainy forest. On the tongue, waves of strawberry and bubblegum marry with a menthol and clove-like mouthfeel. Subtle Noble hops finish this beer with a dryness comparable to a German-style lager, leaving the palate ready for one (or several) more.
Comprised of both wheat and barley, this classic German ale has strong aromas of banana, cloves, and suggestion of cinnamon. Noble hop additions lend a slight lemon bitterness to round out the finish. Extremely drinkable and refreshing.
Created with North American two row and caramel malt, Cascade hops, and a yeast culture that combines both ale and lager yeast. Flavors of biscuits and honey intertwine with a subtle hop presence that makes this beer easy-drinking, light on the palate, yet complex enough to keep coming back for more.

Malt: Belgian Pilsner, Vienna, Munich II, Rye, Pale Wheat, Torrified Wheat
This beer is crafted with care and time. We begin with Belgian pilsner malt, rye, and white wheat. In the boil kettle we add German Opal, French Triskel, and German Tettnang hops. In fermentation we begin with a saccharomyces strain of yeast from western Belgium. We let that yeast strain do its work and when it is finished we let a strain of brettanomyces claussenii take over. What is created is an elegant beer laced with aromas of pineapple, guava, jasmine and herbs. Subtly sweet and spicy on the palate and finishing with a lingering dryness.
Malt: Belgian Pilsner, Cara Ruby, Munich I, Munich II, Vienna, Aromatic
Created with 6 different Belgian and German malts, a yeast strain from the southeastern region of Belgium, German Opal hops, and finally North American Mosaic Hops. This complex build yields a beer that we like to call “summer in glass”. The glass is filled with aromas of peaches and spices while the finish is smooth and reminiscent of biscuits. This beer is a perfect complement to any summer day or evening.
Malt: US Pale Malt, Maris Otter, Rye, Biscuit Malt, Victory, Crystal Light, C77
A formulation of seven malts, three floral hops, and an English yeast strain lend to the stratification of flavors in this brew. Notes of jam on bread, burned sugar, earth, and oak all intermingle alongside a crisp finish that lingers on the palate, without being too heavy.
Malt: Golden Promise, Maris Otter, Rye, Caramalt, Dextrin Malt
Comprised of pale malts and a significant amount of rye, this beer is crafted to be easy drinking yet complex enough to keep you coming back for more. Aromas of honey and cornbread fill the glass, followed by tastes of oranges and biscuits. The finish is where the rye shines through creating a slightly spicy and dry finish. A balanced hop profile comprised of Cascade and Columbus create a bitterness that is clean and subtle.
Our interpretation of the classic Belgian golden strong ale. A simple ingredient base of pilsner malt, noble hops and Belgian candi sugar create a stage for this authentic yeast strain to produce bold and complex aromas reminiscent of apples, lemons, pear and black pepper in the finish.
We used white wheat, flaked wheat, pilsner malt, orange peel, coriander, just the right amount of noble hops, and a yeast strain from Belgium to create this ale. Aromas of oranges and lemon peels, coriander, and just a touch of spice rise from the glass. Light on the palate with gentle sweetness and a subtle clove-like spice, this beer finishes dry with a subtle tartness.
Malt: Maris Otter, Golden Promise, Honey Malt, Biscuit Malt
Subtle and complex, fruity and dry, Candied pear and apricot nose melds into a biscuit malt flavor with a golden raisin and apple finish. This beer is easy going and backboned by a robust fruit character solely delivered from the particular English yeast strain selected from the heart of London.
Brewed as if we were monks. This interpretation of the Trappist Dubbel is a myriad of aromatic, pilsner, and ruby malts with a late addition of Belgian Dark candi sugar and floral hops. A Belgian yeast strain is then allowed to run rampant by producing flavors of fig, plum, raisin, bread, cinnamon and clove. Dry, complex, and seductive.

Additions: Belgian Candi Syrup
An artisanal blend of oats, barley, wheat, Belgian Blonde candi sugar, noble hops, and Belgian yeast. This particular yeast strain has synchronized these complex ingredients to produce an herbaceous, peppery, lemon zest-like aroma. Deceptively smooth for its alcohol content.

True to style, this beer is a smooth and sessionable 4.1% ABV. With aromas of fig, toast, and a subtle sweet and spicy back end. This beer is perfect for those looking for big flavors in an easy drinking ale.
This tart ale was designed to be easy going and also an introduction into the world of mixed culture ale. We crafted this brew with a blend of barley, oats, Belma hops for spice and berry undertones, Lactobacillus Brevis for souring, a fruity Belgian yeast strain, and a load of apricots from Oregon after fermentation is completed.

Additional Ingredients: Fruit (Yearly Variant), Oak
Made to be light, refreshing, complex, and sessionable. Aromas of cranberries, Granny Smith apples, with subtle cellar-must and soft oak on the backend. Sip this one slow and flavors will amplify; which leads to a Cabernet Sauvignon-like undertone, complementing the acidity. This beer is created using a mixed culture of a Belgian yeast, Brettanomyces lambicus, and Lactobacillus brevis. During fermentation we also add 80 pounds of Oregon Cranberries and medium toasted American oak to finish it off.

This beer is loaded with chocolate and espresso aromas and a hint of dark berries. The black patent, chocolate, and brown malts combine to form a flavor that is like biting into a dark chocolate covered espresso bean. With a smooth, almost cream like texture and clean finish, this beer is a perfect winter session ale.
Our interpretation of the classic Irish Dry Stout, specially brewed for St. Patrick’s Day! We built this brew to be lighter in alcohol, roasty and dry, leaving a clean aftertaste that begs for more sips. Subtle fruit and nut undertones are balanced against a coffee and creamier mouthfeel.
Triple Dry Hopped IPA with Mosaic, Amarillo, Idaho 7, Citra

Using Amarillo, Citra, Mosaic, and Idaho 7 in addition to yeast from our friends at @inland_island. This beer is designed to bring out every drop of luscious flavor and aroma from some of our favorite hops and keep you coming back for more.
Voxel is brewed with loads of lime zest (West Indian, Key, and Mexican), orange peel, coriander, a touch of pink Himalayan salt, and Amarillo hops in the whirlpool for added citrus aroma. Voxel has a light, easy going body from the use of Pilsner and Wheat malts, and to make it more refreshing, we also dosed it with lactobacillus for sublte tart acidity. Voxel is the ultimate thirst quencher for hot summer days and a perfect brew for taking to any summer get-together!
American IPA - Dry Hopped with Amarillo and El Dorado
Hops: CTZ, Simcoe, Amarillo, El Dorado
Malt: US Pale Malt, Caramalt, Dextrin
Fresh, brash, and delicious! Aromas of orange zest and tropical fruit collide with flavors of intense citrus and resinous pine in this American IPA. Atlatl was designed to have a simple malt profile of pilsner and crystal malts in effort to showcase the multitude of incredible hops that have been utilized in this brew: Columbus, Simcoe, Cascade, Amarillo, and El Dorado. Like the original throwing spear for which it was named, Atlatl is a piercing and unapologetically high-velocity IPA.
Rye Pale Ale – Dry Hopped With Fuggle, Willamette, and Northern Brewer
Malt: US Pale Malt, Dextrin, Rye, Carapils, English C60
A combination of barley and rye give this pale ale a well balanced body with subtle spice and sweetness. Flavored in the boil with Falconer’s Flight hops and dry hopped with Willamette, Fuggle, and Northern Brewer this beer smells of melons, berries, and pine.
Bold, big, and beautiful, this double IPA explodes out of the glass with grapefruit, orange peel, mango, papaya, and pine. Coupled with a balanced body and a dry, bitter finish this IPA is perfect for those who love their hops and love them to be on display.

A forest of citrus, pineapples, pine, cucumber, and floral aromas. This complex double IPA is produced using North American West Coast and French Triskel hops to add a subtle floral aroma that when blended together create aromas of orange blossoms. With a backbone of North American Two Row and Pilsner malt, this beer is designed to bring the beauty of hop aromas and flavors with just the right amount of bitterness to your palate. Dry-hopped with Columbus and Glacier Hops.
Tropical Double IPA - Dry Hopped With Wakatu and El Dorado
Hops: Magnum, Simcoe, Citra, El Dorado, Mosaic, Motueka
Malt: Belgian Pilsner, Oats, Vienna, Wheat, Carablond, Munich I
Intense flavors of tropical juice (pineapple, mango, guava) and undercurrents of lime, grapefruit, and lemons. Made with a combination of barley, wheat, and oats, with a lovely and fruity English strain of yeast, and some of the absolute juiciest hops available: Wakatu, El Dorado, Mosaic, Citra, Simcoe, and Magnum for subtle bittering.
Beginning with aromas of fresh cut oranges, lemons, tropical fruit, and subtle pine this IPA is specially made to be enjoyed on sunny spring and summer days. A simple grain bill of Belgian Pilsner creates a smooth, easy drinking IPA that finishes with a pleasant balance of bitterness and malt.
This IPA is loaded with some of our favorite hops and hop blends. We used Zeus, Falconers Flight, Simcoe, and Mosaic hops in the boil and a heap of Mosaic hops in dry hop. This combination creates aromas of peaches, apricots, grapefruit, and a hint of pine. A west coast style IPA that is also easy drinking.

West Coast Pale Ale – Dry Hopped With Nelson Sauvin And Columbus
Hops: CTZ, Simcoe, Cascade, Nelson Sauvin
Malt: US Pale Malt, Caramalt, Dextrin Malt
Made with a large amount of North American West Coast hops at the end of the boil and New Zealand hops added after fermentation. This beer explodes out of the glass with aromas of grapefruit, oranges, and hints of white grape skins reminiscent of white wine.
Malt: US Pale Malt, Golden Promise, Caramalt, C190, Carafa II, Carafa III
Where light cannot escape, our Russian Imperial Stout is brewed with copious amounts of German roasted barley alongside absurd quantities of American and UK base malts. Our particular blend of grains produces strong flavors of dark chocolate, espresso, maples, vanilla, and hints of tobacco. High alpha-acid hops help tame this beast and give a peppery, earthy flavor that carries throughout the entire sip. A truly big beer.
Dry Hopped American Strong Ale – Dry Hopped With Citra, Columbus, Zeus, Glacier

Additions: Belgian Candi Syrup
Designed to be show off the beauty and complexity of American hop varieties, this beer is back-boned by a large grain bill to give it a body worthy of its aroma. Aromas of grapefruits, papayas, juniper berries, maple sugar, and a touch of spice fill the glass. A balanced sweetness begins on the palate followed by a mild citrus tang and bitterness, and ending smooth and dry.
Malt: US Pale, Golden Promise, Caramalt, Cara Ruby, C120
Aromas of dark berries, toffee, molasses, and mild toasted spices fill the glass. Tastes of candied dried fruit give way to a complex malty backbone and a complex yet refined finish. Imbibe slowly and as this beer warms it will begin to change and reveal even more aromas and flavors.

Our interpretation of the classic Belgian Dark Strong Ale, aka Belgian Quad. This beer is loaded with complex flavors of dark berries, fig, plum, and raisin as well as luscious aromas of cinnamon, clove, and orange peel. Quixotic, at 10.5%abv, offers a truly opulent experience that resonates long after the first sip.
